Gluten Free Chocolate Cake recipe

As a lot of you have heard, we have started offering cupcakes that are baked with Cup 4 Cup Gluten Free flour.....however, we are not a gluten free bakery so they are not 100% gluten free.  Because of this, we felt it necessary to share one of our recipes with everyone.

Because of the amount of flour we have in our air at all times, we are not able to guarantee that product is truly gluten free.  With this recipe, you will be able to bake gluten free items at home and ensure that they are safe for someone keeping to a  strict gluten free diet.

We wanted to provide the recipe for a Gluten Free Chocolate Cake layer that you can pair with a Vanilla Buttercream, a Chocolate icing or even a Cream Cheese frosting.

GLUTEN FREE CHOCOLATE CAKE LAYERS
(this will make one, 9" round, 3 layer cake)

2 1/4 c. gluten free flour
2 c.  granulated sugar
1/2 c. cocoa
1/2 T. baking soda
1/4 t. salt

1 1/2 c. water
3/4 c. oil
1 1/2 T. white vinegar
1 T. vanilla

Combine dry ingredients in mixer bowl, then add about half the liquids and mix to remove any flour lumps.  Add remaining liquids and mix until combined.  Divide batter into 3 prepared pans.  

Bake @ 325 degrees for 20 minutes.


Special note:  
For our icing recipes ... our powdered sugar, butter, organic milk, vanilla and cream cheese are all gluten free, so you can adapt your choice of icing to top it all off!
